Toss eggs in skillet until almost completely cooked, toss all remaining ingredients except for shrimp in with rice. Stirfry rice until rice is separate, about 5 minutes. Make sure the onion bits are evenly distributed, I use my hands to make sure. Shape into a loaf pan. Place loaf pan in oven.&lt;br /&gt;&lt;br /&gt;Bake for 45 minutes. 1/2 cup of ketchup with 2 tbsp of brown sugar, smother all over meatloaf in the last 15 mins of baking.&lt;br /&gt;&lt;br /&gt;Check center for doneness.
